I recently tried a simple and easy butternut squash recipe and got so many questions about how I made it that I want to share it with all of you. You can easily buy all ingredients in your local grocery store. This fall recipe will take approximately 10 minutes to prepare and 38 minutes to bake.
Ingredients for 2 people
- 1 small to mid-sized butternut squash
- Olive oil
- Salt and ground pepper
- 50g chopped walnuts
- 70g goat cheese (roll) or ricotta
- 1 tablespoon agave syrup
Preheat oven to 200 degrees C (400 degrees F).
Cut butternut squash in half and remove seeds with a spoon. Cut buttnernut squash halfs crosswise. Coat with olive oil and season with salt and pepper to taste. Bake in the preheated oven for 30 minutes. Meanwhile, cut the goat cheese in slices and chop the walnuts. I recommend around 3 to 4 slices of goat cheese per half.
Take butternut squash out of the oven and spread the walnuts and goat cheese slices over it. Drizzle with agave syrup. Bake for another 7 minutes until the goat cheese melted.
Let cool for a few minutes. Spread some chopped parsley over it. Bon appétit!
